The authentic Parsi cuisine

In the bustling streets of old Bombay lived the Parsis — a vibrant community whose warmth, wit and generosity became woven into the fabric of the city. Their homes were places of laughter, storytelling and extraordinary hospitality, where food was always at the heart of every gathering.

I am reminded of my dear friend Hoshang Dadabhoy, whose family lived in a beautiful old colonial apartment tucked away in the crowded streets of Bombay. Walking through their doors always felt like entering another world — the aroma of spices drifting from the kitchen, elders chatting over cups of tea, the uncles with their ‘peg of whisky’, Hoshang’s mother shouting for us to come and eat and the comforting promise that no guest would ever leave hungry.

Living in Bombay and having friends from the Zoroastrian community, many Parsi weddings we were invited to. And they were grand affairs, filled with joyful rituals, music and endless feasts shared with family and friends. Long tables would be laid with dishes that perfectly capture the spirit of Parsi cuisine — a beautiful balance of sweet, sour and spice, influenced by Persian heritage and shaped by the flavours of Bombay.

Dishes like the beloved dhansak, fragrant and rich with lentils and spices, delicate patra ni machhi — fish gently steamed in banana leaves with vibrant green chutney — and the celebratory sweetness of lagan nu custard, a dessert that has graced countless wedding tables.

From tangy fish curries to comforting rice dishes and celebratory sweets, Parsi food is deeply soulful, generous and full of character.

This week, our menu takes inspiration from these cherished flavours of old Bombay, celebrating the rich culinary traditions of the Parsi community.
